Ingredients

  • 120g Mayonnaise
  • 34g Ketchup
  • 8g Worcestershire Sauce
  • 3g Dijon Mustard
  • 2g Hot Sauce
  • 2g Smoked Paprika
  • 1g Garlic Powder
  • 1g Coarse Black Pepper
  • 1g Salt

Instructions

  1. Weigh all ingredients using a digital kitchen scale for professional accuracy. Use a clean bowl and zero the scale between ingredients.
  2. In a medium mixing bowl, combine the mayonnaise and ketchup. Whisk until smooth and uniform in color.
  3. Add the Worcestershire sauce, Dijon mustard, and hot sauce. Whisk thoroughly to combine all wet ingredients.
  4. Add all the dry spices: smoked paprika, garlic powder, black pepper, and salt. Whisk vigorously for 30-60 seconds to ensure spices are evenly distributed with no clumps.
  5. Taste and adjust seasoning. For more heat, add extra hot sauce. For more depth, add a pinch more Worcestershire. For smokiness, add more paprika.
  6. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld together. The sauce will develop more complexity as it sits. Store refrigerated for 3-5 days.
